Paneer, an indigenous dairy product, is obtained by acid coagulation of milk at about 85°C followed by removal of whey and pressing. Yield of paneer made from buffalo milk is 119.5kg/100 kg WMP; pH is 5.8. Paneer contains Moisture 56.3%; Fat 19.8%; Protein 17.9% and Ash 2.3%. TS 54.9%; Fat 90.7% and Protein 84.8% in paneer can be recovered.
