Most people have heard these terms, but may not know what they are exactly or how they work.

This third part of our series will discuss Lipids. This group of biomolecules is a motley crew. It’s comprised of seemingly unrelated compounds with only a single unifying feature: they all hate water. Literally! The lipids are hydrophobic; not in a sense that they have a psychological fear of the wet stuff, but rather they don’t like it and are thus insoluble in it. The members of this lipid group include waxes, sterols, phospholipids and fats. But why the hate? It’s actually a result of their molecular structure. While they may have polar bonds, lipids are essentially made of nonpolar hydrocarbons.
